Fun twist on a traditional recipe for the holidays...

Payton's Pumpkin Pancakes
1 cup all purpose flour
1 cup whole wheat flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon pumpin pie spice
1 teaspoon cinnamon
1 teaspoom salt
2 eggs
2 cups low fat milk
1/2 cup canned pumpkin
2 Tablespoons oil
*applesauce optional

Heat electric griddle to medium. Mix flour and sugar in a large bowl. Add baking powder, pumpkin pie spice, cinnamon and salt. In a small bowl beat eggs, add milk.Add pumpkin and cooking oil, mix well. pour wet ingrediants into dry ingrediants and mix, might be lumpy. Brush oil over skillet pour a 1/4 cup of pancake mixture onto skillet. cook until bubbles begin to burst, turn and continue cooking for 1-2 min, Repeat with remaining batter. Top pancakes with applesauce or maple syrup.

Cheesy Apple Bacon Brunch

Prep: 10 min
Bake: 30-35 min
Serves: 10-8

1 medium cooking apple
2 tablespoons of sugar
1 1/2 cups milk
1 1/2 cups bisquick original baking mix
4 eggs
2 cups shredded Cheddar cheese (8 oz)
1 pound bacon, crispy cooked and crumbled

Heat oven to 375 degrees. Grease rectangular baking dish. Mix apple and sugar, spread in baking dish. Stir  baking mix, milk, and eggs until blended; pour over apple. Sprinkle with cheese and bacon. Bake uncovered 30 to 35 minutes or until knife inserted in center comes out clean.

My Recipe of the Day


HOT SPINACH & ARTICHOKE DIP

PREP: 10 Min
COOK: 35 Min
INGREDIENTS

1 (10 oz.) pkg frozen chopped spinach, thawed and squeezed dry
1 (8 oz.) pkg cream cheese, softened
3/4 cup Mayo
1-1/2 cups shredded cheddar
1 package Knorr® Vegetable recipe mix
1 (14 oz.) can artichoke hearts, drained and chopped
2 cloves garlic, finely chopped

PREPARATION
Preheat oven to 350°.
Combine all ingredients except 1/2 cup of cheddar cheese. Spoon into a casserole dish, top with remaining 1/2 cup of cheese.
Bake for 35 minutes or until dip is hot. serve in a bread bowl with slices of asiago cheese bread.
MAKES 4 cups
