Fun twist on a traditional recipe for the holidays...

Payton's Pumpkin Pancakes
1 cup all purpose flour
1 cup whole wheat flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon pumpin pie spice
1 teaspoon cinnamon
1 teaspoom salt
2 eggs
2 cups low fat milk
1/2 cup canned pumpkin
2 Tablespoons oil
*applesauce optional

Heat electric griddle to medium. Mix flour and sugar in a large bowl. Add baking powder, pumpkin pie spice, cinnamon and salt. In a small bowl beat eggs, add milk.Add pumpkin and cooking oil, mix well. pour wet ingrediants into dry ingrediants and mix, might be lumpy. Brush oil over skillet pour a 1/4 cup of pancake mixture onto skillet. cook until bubbles begin to burst, turn and continue cooking for 1-2 min, Repeat with remaining batter. Top pancakes with applesauce or maple syrup.
