Holiday Thumprint Cookies

Okay so last night my family got together to make christmas cookies, we all picked our favorite kind, Tanya made peanut butter cookies with hershey kisses, Rylee made sugar cookies, Cody made oatmeal chocolate chip, my dad tried his moms favorite christmas cookie recipe for polish angel wings and i chose this recipe, i have made these cookies before but i tried something a little different last year i melted white chocolate chips with butter and filled the tip of a sandwich bag then i cut a tiny hole and I drizzeled it criss cross over the cookie and sprinkled with red and green sprinkles.. just idea to make it a little more festive...

Raspberry Thumprint Cookies


1/4 cup packed brown sugar
1/4 cup shortening
1/4 cup butter, softened*
1/2 tsp vanilla
1 large eggs yolk
1 cup all-pupose flour
1/4 tsp salt
1 large egg white
1 cup finely chopped nuts, optional
About 6 Tablespoons jelly or jam

Heat oven to 350 degrees. Beat brown sugar, shortening, butter, vanilla and egg yolk in medium bowl with electric mixer on medium speed, or mix with spoon. Stir in flour and salt.

Shape dough into 1 inch balls. Beat egg white slightly with fork. Dip each ball, roll in nuts. Place about one inch apart on ungreased cookie sheet. Press thumb in center of each cookie to make indentation, but do not press all the way to the cookie sheet.

Bake about 10 minutes or until light brown. Quickly remake indentations with end of wooden spoon if necessary. Immediately remove from cookie sheet to wire rack. Fill each thumbprint with 1/2 measuring teaspoon of jelly.
